Picarones

Well sort of, they are called picarones. These light flavorful fried dough rings are delicious.

First you boil up some cloves, cinnamon stick, allspice, and star anise to get the flavor into the water. Strain off the spices and cook sweet potato and a squash that is similar to a winter squash until soft.

Zapallo squash is sold in large chunks (the piece on the table weighs about 2 pounds). In the market they sell it by the piece as a whole one is huge!

Cool the cooking water and mix it with sugar and yeast. Stir eggs and salt into the squash mixture, add the yeast mixture, and beat in flour to make a soft dough. Let it rise while you make the Chancaca syrup.
 

 
The syrup is made by shaving a block of raw sugar into water, add orange peel, cinnamon sick, cloves, and brown sugar. Boil until it is like syrup.
 

Then take up bits of the dough and poke a whole in the center, drop it into hot oil to fry it. Stir it with the stick in the hole to make it larger.
 
 
 

When it is golden, lift it out of the oil and leave it on the stick to drain and stay warm.
